Blueberry Mug Cake with coconut oil, no eggs.

A perfect 5 minute mug cake recipe for breakfast without eggs.


I found this recipe on Kirbie's Cravings blog. I changed the ingredients a bit as I wanted to use coconut oil and brown sugar.

Here is the recipe:

Ingredients:

  • 4 tbsp organic flour
  • 1/4 tsp baking powder
  • 2 1/2 tsp brown sugar
  • 3 tbsp organic milk
  • 1/2 tbsp coconut oil
  • 1/4 tsp vanilla extract
  • 10 blueberries

Melt the coconut oil in the microwave in a cup then add the milk. Add the rest of the ingredients without the blue berries. Once you have a nice texture add the blueberries. Be careful that all of the berries are in the dough and that none are on the surface. In the microwave they might explode.

Cook for 1 minute 15 seconds in the microwave. Unmold onto a plate and add topping to your desire. Personally I had an ewe milk natural yogurt.
