Vegan Recipe: Midway between a Veggie Strudel and a Calzone vegan pizza

As always my passion for Italian food had my taste buds and my determination to find vegan alternatives for this recipe working overtime! 

It turns out that this recipe is very easy and such a great idea to finish any leftover veggies. As you can guess I loved it. The different possibilities for the filling are endless, limited by your imagination or your fridge!

To make this recipe, I used these ingredients: 

1 pizza dough.
20cl of coconut cream
1 to 2 teaspoons of curry powder depending on your taste preference.
2 small carrots.
2 slices of eggplants (Lengthwise)
3 ring slices of green and yellow peppers.
Half an onion.
A handful of mushrooms.
4 sprigs of parsley
Gomasio

Method:

Preheat your oven to 180°C.
Cut the bell peppers, eggplants (aubergines), onions and mushrooms into cubes. Grate the carrots, finely chisel the parsley.
Place all of the vegetables into a bowl. Add slowly the coconut cream and the curry powder. Mix all of the ingredients until all of the vegetables are covered in cream.
Use a drip tray or a pizza tray. Place a sheet of grease proof paper onto the tray.
Place the dough onto the tray. Add the vegetable lenghtwise. Fold the two shorter ends over the vegetables. Then fold over the larger parts, one by one.
Cut out a criss-cross design on the dough. Baste the dough with some coconut milk or a plant milk of your choice. Sprinkle the dough with some de gomasio. I use the brand Terre exotique. The sesame seeds are also salted. Which makes it's double use, very practical.

 

Place at medium height in the oven for 20 to 25 minutes.

 
When you take the pizza out of the oven, please be careful as the filling is very hot. Let the pizza cool down before serving. 

 

Cut the pizza into large slices and serve with a side salade. Light and filling meal, ideal for supper time or your evening meal.
