Vegan recipe: Winter salad with Kale and a maple syrup seasoning.

Such a pleasure to use seasonal fruits for a delicious winter salad. Kale is one of the "super foods", that before becoming vegan that I had never even heard ofIt's one of my unknown veggies that I read about in the very beginning.

Did you know that those adorable green leaves are very rich in proteinsfibersvitamin A, B, C and K, fatty acids, omega-3, iron, potassium, calcium, zinc and lutein! You have to admitthats a lot for some green leaves! You can understand why it's called a "super food."

So without further ado, let's get some kale! Here is one of my first recipes to help you discover this wonderful vegetable that you can no longer neglect.Winter salad with kale and the most amazing homemade vinaigrette that you have ever tasted!

Ingredients (for one person):

2 leaves of kale.1 Apple1 tbs of cranberries1 tbs of pecan nuts.For the vinaigrette:2 tbs of Olive oil.1 tbs of Balsamic vinager.1 tbs of maple syrup.Salt & pepper.

Method:

Wash the Kale leavestear the leaves from their main stem. Cut the leaves into roughly bite size pieces. Place them in a bowl.Pour one table spoon of olive oil overt the leaves. "massage" the oil into the leaves.T he act of massaging or squashing the leaves in your hands, actually makes the kale more supple and easier to chew, which also means that it is going to be easy to digest. Be sure that all of the leaves of kale have been covered in oil.Wash, then cut the apple in four, cut out the pips and the center of the apple. Then cut the quarters into bite-size pieces. Add them to the bowl with the kale.Add the cranberries, the pecan nuts. Mix the ingredients well and your salad is ready.Use a mal bowl to make the vinaigrette. Add the olive oil, the vinager and the maple syrup to the bowl. Add salt & pepper to suit your own taste. Pour the dressing over the salad and your are ready to go!Enjoy! Let me know what you think? Personally, I loved the dressing, so amazing! It goes so well with the apples! Really delicious!
