Vegan Recipe : Roasted Chick Peas

« Where do you get your protein? » A lot of people ask me this question.

One of my favorite sources of protein is Chickpeas. Often known to be used in oriental dishes like Couscous and Tajines. Chickpeas can also be a healthy and very tasty snack or salad topping. This leguminous is not only rich in plant-based proteins, but also in fibres, vitamins, and minerals. It also has the advantage of being low in fat and no cholesterol. Which puts it on the top of my list!

My favorite way of eating them, is roasted. It's easy and quick to make. Once cooked they can be kept in an air tight box in your fridge.

To make this recipe I used a small tin of Chickpeas. I often take advantage of the oven being in use to pop a few Chickpeas in at the same time.

Rince and drain the chickpeas

N° 1: Abondantly rince and drain you chick peas.

Remove the skin.

N°2: Remove the skin from each of the chickpeas, It's easier than it looks, all you need to do is to take the pea in between your thumb and you index and gently press. The chickpea will pop out of it's skin. This can take a few minutes, so I usually preheat the oven during this time! 🙂  Oven heat: 180°C / 350°F.

N° 3: Dry the chickpeas with a clean tea-towel. you can gently roll them in the towel, this is important as you need the oil to cover the chickpeas to avoid them burning.

Add olive oil, herbes and spices.

N° 4: Place the chickpeas in a bowl, add olive oil, herbs, and spices of your choice. The quantity depends on the number of chickpeas. At first, add little by little to be sure to not over do it. What you need is for the chickpeas to be coated in oil. Don't hesitate to try different spices to find your favorite reciepe. For exemple parsely & garlic, or curry & paprika.

N° 5: Place the chickpeas on a sheet of baking parchment, on an oven tray. Be careful that you only have one layer of chickpeas, they will be quicker to cook.
Place them in the middle of your oven for about 15 minutes, if you would like them to be really crispy add an extra 5 minutes.
Once they are golden brown, take them out of the oven, let them sit for a few minutes (I know it's hard to wait, especially when they smell so good! 🙂) but they can be very hot on the inside. You can then eat them hot or cold, depends on your own preference. You can eat them on their own as a healthy snack or as a topping for your savory toast or salads. I often use them in my Buddha Bowls.
